The original Bergen Cinnamon Rolls: Skillingsboller
A quick and cheap eat in Bergen!

If you are a bit hungry on your way through Bryggen you should stop at a bakery and try a "Skillingsbolle". The names comes from the time when the price for one of these rolls were 1 Schilling. This typical Bergen pastry can be bought in every Bakery and is typically enjoyed in the morning with a cup of coffee or as a snack during the day between the meals. This pastry is popular in other parts of Norway as well and is also called "Kanel i svingane" which basically means "cinnamon rolls".
If you want to try to make it yourself, here you have a receipte:
6 cups white flour
1 cup sugar
3/4 cup margarine
50g yeast
2 cups lukewarm milk
2 tbsp cinnamon
2 tbsp sugar
Mix together the first 4 ingredients, then add the milk. Knead slightly and let the dough rise 1 hour. Mix the sugar and cinnamon together.
Divide the dough in half, then roll each piece to a square about 16"x16". Spread the cinnamon-sugar mixture on top. Roll up each into a piece and slice off 12 equally-sized pieces. Shape into rolls. Let rise on a pan. Brush with egg white, then sprinkle with sugar. Bake at 325 degrees for 15-17 minutes until they are golden.
